Long blacks, short blacks and other fancy coffees
You can seriously walk into one café in the same city order a long black, get a coffee, then walk into one around the corner, order the same coffee and get something completely different! This can be frustrating as a customer, tough it isn’t all bad, it is because hopefully the barista is trying to serve the coffee the way they like to drink it, hence improving the coffee as a whole…hopefully!
A long black as explained in my other blog post is a tastier interpretation of the a Americano. While they dump hot water on top of fresh espresso, a long black puts the water in first, then the fresh espresso on top.
Whether it is a double shot, single shot or double ristretto, it is up the to barista. At Black Market Roasters, we would typically, put a double ristretto on top of water that is approx. 75 degrees. A short black is merely 25-30 ml of the extraction and a piccolo is an espresso shot, with another 30 ml added to the top, with the foam ratio similar to a latte, hence piccolo latte.
These coffees seriously differ from state to state and I think it is cool that it does, as we will hopefully follow the path of what tastes best, rather than what is traditional, that can be kept in a museum!
