Every great espresso starts with consistency.
Most coffee drinkers focus on the coffee machine.
But experienced baristas know that the grinder often plays an even bigger role in producing a great cup.
One of the biggest innovations in café grinders over the past decade has been the move from grind-by-time technology to grind-by-weight technology.
So what's the difference?
The Traditional Approach: Grind By Time
For a long time now, automatic espresso grinders work using a timer.
A barista programs the grinder to run for a set amount of time.
For example:

6.2 seconds for a double shot
This system works well, but it has one major limitation.
It assumes coffee behaves exactly the same every day.
Unfortunately, coffee doesn't.
Coffee Is Constantly Changing
Coffee is affected by:

Temperature

Roast age
As these variables change, the speed at which coffee flows through the grinder also changes.
This means:

Even small changes in dose can significantly impact espresso extraction.
Can Grind-By-Time Still Produce Great Coffee?
Absolutely.
While grind-by-weight technology offers greater convenience and consistency, a well-managed grind-by-time grinder can still produce excellent results.
The key is that the barista must actively monitor the coffee dose and make regular adjustments throughout the day.
For example, a café may be aiming for an 18-gram dose.
An attentive barista will regularly check the dose weight and make adjustments to either:

Or both
to ensure the recipe remains consistent.
This process is often part of a café's normal dialling-in routine and is one of the reasons experienced baristas spend time weighing doses and tasting espresso throughout the day.
What Is Grind By Weight?
Grind-by-weight grinders solve this problem.
Instead of grinding for a fixed amount of time, the grinder measures the actual weight of coffee being delivered.
The grinder automatically stops once the target weight is reached.
For example:
18.0 grams means 18.0 grams.
Every time.
