Coffee catching up to wine!

Recently at MICE [Melbourne International Coffee Festival] I [Jess the Roaster] was lucky enough to take part in a cupping session held by Latore & Dutch showcasing coffees from a small and dedicated coffee processing mill in Colombia, El Tucan & La Palma.
Within the industry there is an increasing scientific approach to growing and processing coffee (ie. removing the fruit from the bean and preparing it for roasting) and it was very interesting to hear the manager of the processing plant take us through exactly what new techniques are being used.
On the table we had a selection of coffees from growers that are located within a 10km radius of the mill. Whilst all the coffees were ‘washed processed’ they were done so under strictly controlled conditions. Temperature, enzymes and microbes are all monitored and variated to produce the desired flavour profiles.
The results on the cupping table were remarkably different and categorised into Acetic fermentation and Lactic fermentation. Whilst the acetic fermentation produced a delicious clean profile with crisp acidity the lactic fermentation method produced a more voluptuous body with sweet berry tones, not too dissimilar to what a natural processed coffee would taste like.
I have often thought of the parrallel’s that can be drawn between the wine and coffee industry and find it extremely intriguing that when it comes to scientific application in these industries, coffee is catching up!
