The barista who lasts six months learns the motions, grind, tamp, pull, texture, pour. The barista who lasts six years learns to notice. They clock the regular having a bad day before they've even ordered, and catch the shot that's running a second slow before the machine flags it.
Noticing is a habit, not a skill you're taught in week one
Nobody teaches you that in week one. It's a habit built by caring past the point most people stop, long after the basics feel automatic. If you're still asking questions a year in, that's not a bad sign, that's exactly the barista who makes it to year six.
